Chicken Biryani

This classic Indian dish uses Super Lucky Elephant Basmati Rice to create a rich and flavorful one-pot meal. Aromatic spices are layered with chicken and rice, then cooked to perfection for a delectable dining experience.

Ingredients:

  • 2 cups Super Lucky Elephant Basmati Rice, parboiled

  • 4 chicken thighs, bone-in

  • 1 cup plain yogurt

  • 1 tablespoon grated ginger

  • 2 cloves garlic, minced

  • 1 tablespoon ground cumin

  • 1 tablespoon ground coriander

  • 1 teaspoon turmeric

  • 1 teaspoon cayenne pepper

  • 1 large onion, thinly sliced and fried until golden

  • 1/4 cup milk

  • A few strands of saffron

  • Fresh cilantro and mint leaves for garnish

Preparation:

  • Marinate the chicken thighs in a mixture of yogurt, ginger, garlic, cumin, coriander, turmeric, and cayenne pepper. Allow the chicken to marinate for at least 2 hours, or overnight for the best flavor.

  • In a large pot, layer the marinated chicken, parboiled Basmati rice, and fried onions.

  • Warm the milk slightly and infuse it with the saffron strands. Pour this over the layered chicken and rice.

  • Seal the pot tightly and cook on low heat for about 1 hour, until the chicken is cooked through and the flavors have melded together.

  • Before serving, fluff the rice gently with a fork, and garnish with fresh cilantro and mint leaves.
