Rice Cookie Tart

Ingredients

Rice Cookie:

• 1 cup of white rice

• 1 ½ cups of water

• Honey to taste

• Whipped cream

Topping

• Cherries

• Sliced peaches

Step-by-Step Instructions:

  1. Let's start the recipe for these rice cookies by washing the rice several times to remove impurities.

  2. Let it drain for a while.

  3. Pour the one and a half cups of water into a pot and place it on the heat. When it starts to boil, add the rice and cook over medium heat for 18 minutes.

  4. After that time, spread the rice on a tray and let it cool well.

  5. While it reaches room temperature, preheat your oven to 180°C (356°F).

  6. Once cool, divide the mixture and add honey.

  7. Take small portions of the mixture, make a ball, and then flatten it into a cookie shape.

  8. Place your cookies on a tray with parchment paper and bake for approximately 45 minutes.

  9. After this time, remove from the oven and let them rest.

Topping:

  1. Once the rice cookies are cool, add a little whipped cream on the edge of the cookie and in the center, decorate with the cherries, previously washed, and the peaches.
