Chicken and Vegetable Jasmine Fried Rice

Experience the aromatic fragrance of jasmine rice with tender chicken and colorful vegetables in this classic dish. It's a perfect one-pan meal for a quick weeknight dinner.

  • Ingredients:

  • 2 cups Super Lucky Elephant Thai Hom Mali Jasmine Rice, cooked and cooled

  • 2 chicken breasts, diced

  • 1 cup mixed vegetables (carrots, peas, bell peppers), diced

  • 2 cloves garlic, minced

  • 2 eggs, beaten

  • 2 tablespoons soy sauce

  • 2 teaspoons sesame oil

  • Green onions for garnish

Preparation:

  • In a large skillet or wok, heat the sesame oil over medium heat. Add the diced chicken and cook until browned.

  • Add the minced garlic and diced vegetables. Sauté until the vegetables are tender.

  • Push the chicken and vegetables to one side of the skillet. Pour the beaten eggs into the other side and scramble.

  • Mix the eggs with the chicken and vegetables. Add the cooled jasmine rice, stirring to combine.

  • Drizzle with soy sauce and toss until everything is well coated. Garnish with green onions before serving
