Thai Pineapple Fried Rice

  • Ingredients:

  • 2 cups Super Lucky Elephant Thai Hom Mali Jasmine Rice, cooked and cooled

  • 1 cup diced pineapple

  • 1 cup mixed vegetables (bell peppers, peas, onions), diced

  • 1/2 cup shrimp or tofu

  • 1/4 cup cashews

  • 1/4 cup raisins

  • 2 tablespoons curry powder

  • 2 tablespoons soy sauce

  • 1 tablespoon fish sauce

Preparation:

  • In a large skillet or wok, heat some oil over medium heat. Add the shrimp or tofu and cook until done.

  • Add the diced vegetables and sauté until tender.

  • Stir in the curry powder, then add the cooked jasmine rice, pineapple, cashews, and raisins.

  • Drizzle with soy sauce and fish sauce, and toss until everything is well combined and heated through.
